The &quot;breather&quot; is called an airlock, the﻿ wine doesn&#039;t evaporate, it gets converted into gasses (and alcohol) and it doesn&#039;t spoil if you don&#039;t top off the liquid level because the CO2 gas being expelled doesn&#039;t react with the wine like oxygen. 

I RECOMMEND YOU FIND ANOTHER TEACHER TO LEARN FROM.</description>
